Today was a good day!

This afternoon i make one of my favorite meals. 
Guacamole stuff Turkey Meatloaf with Bacon

Here is the recipe. please give it a try. it's SUPER easy and takes only a few moments to put together.

You'll need:
  • 1 package ground turkey ( i used Jenny-O lean turkey)
  • 3 Haas avocados
  • 4 sliced of hickory smoked bacon
  • 2 Roma tomatoes, seeded and diced
  • Guacamole  seasoning (I'll have that in a second)
  • Adobo Seasoning (recipe will follow shortly)

preheat oven to 350 degrees
I use a Cast Iron pan for this.

First i make the Guacamole, i use this recipe and Love it. 
  • 3 Haas avocados, halved, seeded and peeled
  • 1 lime, juiced
  • 1/2 teaspoon kosher salt (optional, remember you're using bacon. i leave this out)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne
  • 2 Roma tomatoes, seeded and diced
  • 1 tablespoon chopped cilantro (powdered is fine also)
  • 1 clove garlic, minced
 Mix all of the ingredients together (chunky or smooth is your call), and put in the refrigerator.  

 I start by taking the 4 slices of bacon and cutting them in half making 8 equal pieces. i lay 6 pieces down in the bottom of the Cast iron pan, saving the 2 other slices for laying on top of the meatloaf. i then split the turkey into 2 equal parts. first half i make into a flat disk/bowl shape and place it into the center of the cast iron pan. I take my Guacamole out of the fridge, use only Half of the Guacamole mix (other half goes back in the fridge) and place in the middle of the ground turkey in the pan. using a spoon smooth it out and keep it about 1" away from the edges. then take the second half of the ground turkey and make an equal size disk shape and lay it smack on top top of the turkey in the pan. gently mooch the edges to seal the Guacamole inside. then take the two remaining pieces of bacon and simply lay them on top of the monster size turkey burger looking thing you just put together.

I then shake on some of my Adobo seasoning, i use this recipe:
  • 6 Tablespoons Salt
  • 6 Tablespoons Granulated Garlic
  • 4 Tablespoons Oregano
  • 2 Tablespoons Black Pepper
  • 2 Tablespoons Turmeric
  • 2 Tablespoons Onion Powder
Mix ingredients together and store in an airtight container for up to 6 months.
Serves: Makes between 1 1/4 and 1 1/2 cups of seasoning.
** i make this with out salt just for this recipe (remember bacon?) so i can always add salt later depending on the recipe i would use the Adobo for.

pop the turkey into the oven and let it cook for about 45/60 min's depending on your oven.

rice works great with this as well as steamed veggies.

OH and this feeds about 3 people (2 in my home) so if you have more people your cooking for its up to you to do the math.
